Healthy Bolognese

Bolognese Pasta was the first recipe I ever posted on the blog. Since 2010, I have changed my focus from just vegetarians to people who want to live healthy no matter your diet.  Since finding out that I am gluten sensitive, pasta is limited in my diet but I still love the sauce.  It also is the recipe with the most comments, so I thought it was time to revisit it.  With fall weather swiftly kicking in on the east coast, you want dinner to be warm and comforting but quick. Bolognese can take hours or a few minutes.  It can be vegetarian, low fat, veggie fortified while tasting good. I hope you this because one of your favorites too.


  • 2 tablespoons of olive oil
  • 1/4 cup  of diced onions
  • 1/2 cup of diced bell peppers
  • 1/4 cup of diced carrots
  • 1 clove of crushed garlic (1/2 teaspoon)
  • 2 cups of frozen soy granules (Crumbles) or 1 cup of TVP hydrated or 1 lb of lean ground turkey
  • 1 cup of vegetable broth
  •  teaspoon of Worchestire Sauce
  • 1 tablespoon of Ketchup
  • 1/2 box of  your favourite tubular pasta (rigatoni, ziti, penne)
 1. Sautee chopped onions, green peppers, garlic and carrots until softened
     *Boil pasta according to package*

 2. Add meat substitutie or ground meat to the soften vegetables. Make sure you break up the ground meat for even browning and no clumps.

3. Season mixture with oregano, salt and pepper

4. Add Worchestire sauce, broth and ketchup to the seasoned mixture and simmer for 10 minutes.

5. Top cooked pasta with sauce chopped basil and grated Parmesan cheese

Serves 4-6
